Title: How does wine expertise change the way we taste?

Abstract: The acquisition of wine expertise is a learning process on both perceptual and cognitive levels. In this talk, I will draw on my experience both as a sensory researcher and wine educator to showcase some of my recent studies that address 1) the direct effect of the training process, and 2) differences in how wine experts describe, discriminate, and generate abstract knowledge from wine.

Bio: Experimental psychologist and computer scientist by training, Janice is an Assistant Professor at the Department of Food Science at Aarhus University, with an affiliation at the Center for Hybrid Intelligence, the Cognitive Neuroscience Research Unit, and the Aarhus Institute of Advanced Studies. Her research examines the role of the brain flavour system and its connection with eating behaviour, in order to gain a deeper understanding of why people eat what they do, and to encourage behaviour change for a healthier, more sustainable lifestyle. A lifelong lover of wine, Janice is the reigning Danish Blind Wine Tasting Champion and a stage 2 Master of Wine student.
